I managed to remove the steering rack (after I'd removed the engine and gearbox) - but it put up a pretty good fight!

I'm now struggling to refit it (especially now the gearbox is back in place).

Is there a trick to refitting the rack?

Have done this only two or three times in 50 years. The Troll's rack was put in whilst the engine bay was bare.
The WSM infers you remove the tie rod end driver's side (RHD) and feed the rack in towards the nearside of the car, over the top cover of the transmission and when aligned feed the pinion shaft through the rubber grommet in the bulkhead. It does suggest you remove the rubber grommet first and place loose over the shaft and reseat it in bulkhead after completion of fitting the rack. (Fiddly IIRC)
The Haynes manual offers more, in that it advises the rack be turned to full right lock before removal but on reinstallation the rack be set at centre position and that the steering wheel be set at the straight ahead position ready to mate with the pinion shaft. Replace right hand TRE and check alignment of steering.
I assume you have loosened the steering column on its bracket to facilitate removal.

I didn't loosen the steering column, is this the 2 x gear adjustment bolts or another bolt/s?

Yes the two that secure the column to the body bracket. But if you can get it back in without loosening them then all the better.
